Unlike traditional meat substitutes, Maia Farms targets the meat industry itself with its mycelium-infused products. By blending mycelium with meat, significant nutritional, taste, and texture benefits can be achieved while reducing the amount of meat required. This offering comes at a crucial time for the food industry, grappling with soaring meat prices.

According to Maia Farms, mycelium could potentially substitute 25 to 40 percent of meat in products like sausage rolls, meatballs, and burger patties. Aside from financial advantages, incorporating mycelium into meat products also offers environmental benefits. In comparison to beef production, mycelium production generates significantly lower carbon dioxide emissions and water usage, making it a more sustainable choice.

Chief Innovation Officer Sean Lacoursiere emphasizes the familiar and palatable nature of mycelium, highlighting its long history of consumption as an oyster mushroom. He believes that the company’s innovative approach to growing mycelium in a liquid state will revolutionize the food industry.
